1 cup butter or margarine, melted
3/4 cup brown sugar
3/4 cup Splenda for baking
2 eggs
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup of carob chips
1 cup of raisins (soaked first in warm water until they’re plump, then drained)
A few tablespoons of milk.
Preheat oven to 350°F. Cream together butter or margarine; and sugars. Then add the eggs, one at a time; and the vanilla extract. Add to creamed ingredients, after sifting the dry first. Add carob chips and raisins last; and stir in milk to blend flour completely in. Put in a greased and floured 10″ inch bundt pan.
Bake at about 40 minutes, checking with a toothpick that the middle springs back.
Cool 10 minutes in the pan before turning out. Serves 12
