Serve this chilled, refreshing spread over thinly sliced cocktail bread.
Yields: 3 1/2 cups
4 medium cucumbers, peeled, seeded, and grated
1 1/4 cups low-fat plain yogurt
1/4 cup sour cream
6 cloves garlic, finely chopped
2 green onions, finely chopped
2 tablespoons chopped fresh dill
1 tablespoon chopped fresh mint leaves
1 teaspoon ground black pepper
3/4 teaspoon salt
Fresh dill sprigs (optional)
In medium bowl, combine cucumbers, yogurt, sour cream, garlic, onions, dill, mint, pepper, and salt. Cover and refrigerate for at least 2 hours. When ready to serve, stir mixture until well combined; transfer to a serving bowl. Garnish with dill sprigs, if desired.
