- 1 1/2 to 2 pounds fish steaks, (any kind) (4 to 6 servings)
Salt and freshly ground black pepper to taste
3 Tbsp bread crumbs
2 garlic cloves, minced
2 Tbsp lemon juice
1/2 tsp paprika
1/4 tsp dried tarragon
3 Tbsp white wine or fish stock
Season fish steaks on both sides with salt and pepper then broil 3 to 5 minutes per side, depending on thickness of the steaks. Fish should be firm to the touch when done. Combine bread crumbs, garlic, lemon juice, paprika, and tarragon in small bowl. Add wine or fish stock and stir til thick and creamy. Top the fish steaks with the sauce immediately before serving.
