1 2/3 cups crushed animal crackers
5 tbs. melted butter
1 tbs. honey
1 tbs. sugar
1/4 cup cornstarch
12 oz can sweetened coconut water
3 tbs. sweetened flaked coconut
1 tsp. coconut extract
8 oz container frozen whipped topping
Stir together crushed animal crackers, melted butter and 1 tbs. honey in bowl. Press crumb mixture over bottom and sides of 10 inch round pie pan. Bake crust in 425 DEGREE OVEN* for 12 min. or until golden. Cool.
Mix sugar and cornstarch in saucepan. Stir in sweetened coconut water and sweetened flaked coconut. Cook over low heat until thickened and bubbly, about 8 min. Add coconut extract; stir well and cool 15 minutes.
Fold in frozen whipped topping. Spread filling in pie shell. Freeze 4 hours or overnight.
TO SERVE: LET STAND AT ROOM TEMP 1 HOUR. GARNISH WITH GRATED LIME RIND.
