Tried and True!!! My family’s recipe!
I believe this came from my great Aunt Jeanne. The recipe was found among my grandmothers recipes, with a notation of “Jeanne” on the corner of it. I seem to recall Gram telling me that her sister showed her how to make it. I typed this up exactly as it appeared on the recipe card.
Drain 1 can crushed pineapple and save the juice. Dissolve 1 small package sugar-free lemon or lime gelatin in 1 cup hot water. Add 1 cup of the saved pineapple juice and mix well. Add 1 cup of the pineapple, 1 cup grated carrots, 1 TBSP cider vinegar, 1/2 tsp salt and 1/2 cup chopped walnuts. Mix well. Refrigerate and stir after about 1 hour or so. Then let set [in refrigerator] til serving time.
