- 1/2 cup olive oil
1/2 cup honey
1/4 cup red wine vinegar
1/2 tsp salt
1 tbsp chopped fresh thyme
2 acorn squash, cut into wedges
2 red bell peppers, cut into 2-inch pieces
2 green bell peppers, cut into 2-inch pieces
2 small purple onions, sliced
1 fennel bulb, sliced
Combine first 5 ingredients in a large bowl; add squash and remaining ingredients, stirring to coat vegetables. Pour vegetable mixture into an aluminum foil-lined roasting pan. Bake at 425°F. 40 to 45 minutes or until tender and lightly browned, stirring occasionally. Serve with a slotted spoon.
