Crock Pot / Slow Cooker

3 or 4 cups cooked chicken, diced
1 pg (10-12) flour tortillas
1 medium onion, chopped
2 (10 oz) cans cream of chicken soup
1 can (1 C.) tomatoes and chilies
4 Tbsp quick cooking tapioca
4 cup grated cheddar cheese
In large bowl, mix chicken, soup, tomatoes w/chilies, and tapioca. Rip 3 tortillas into pieces, line bottom of 5 qt Crockpot.
Add ⅓ of chicken mixture, top with 1/3 of onion and cheese. Repeat layers of tortillas, chicken mixture, onions, cheese two more times. Cover, cook on low for 6-8 hrs. or high 3 hours. Serves 8-10. I sprayed the bottom of Crockpot with non-stick cooking spray first and then I also doubled the amount of tomatoes (to make this mixture go farther and feed more people). I used two cans of tomatoes/chilies.
