2 pounds scallops
1/2 cup lime juice
3 Tbsp olive oil
Dash salt and pepper to taste
2 limes cut in wedges for skewering
Garnish: 2 Tbsp chopped cilantro
Mix scallops, lime juice, oil and salt and pepper in glass bowl. Let marinate in the refrigerator for at least 2 hours. When you’re ready to cook, thread lime wedges and scallops (1 wedge — 3 scallops, etc.) onto skewers. Cook under broiler or on charcoal grill for 5 to 6 minutes, turning once. Sprinkle with cilantro and serve.
