2 1/4 cups Flour
3/4 cup Mesquite Flour (Meal)
2 1/2 teaspoons Baking Powder
1/2 teaspoon Salt
3/4 cup Butter, softened
1 1/3 cups Sugar
2 each Eggs, large
2 teaspoons Almond Extract (Any flavor will be fine)
1 1/3 cups Milk
Preheat oven to 350º F. Sift the flours, salt, and baking powder together. Beat the sugar, eggs, almond extract and butter in a separate bowl until well incorporated. Mix the contents of the two bowls together slowly adding the milk and beat until smooth. Pour batter into two (2) oiled and floured 9-inch round cake pans. Bake for 30 to 35 minutes or until a tooth pick inserted into the middle of the cake comes out cleanly.
Mesquite Syrup

1 1/2 cups Orange Juice
1/2 cup Mesquite Meal (Flour)
1/2 cup Light Brown Sugar
Place ingredients in a sauce pan and simmer for 10 minutes. Let cool then poor a little over the top of the first layer. Place the second cake on top of the first and poor the rest over both cakes evenly. Serve warm or cool. Be sure syrup is thicker than traditional syrup; it should be thick like Karo® or molasses.
