1 pkg lime Jell-O
1 cup hot pear juice (reserve juice from canned pears)
2 pkgs cream cheese (8 ounces each)
Juice of 1 lemon
1 qt. pears (canned)
1/2 pt. whipped cream
Dissolve Jell-O with hot pear juice. Blend the cream cheese with lemon juice very well. Add Jell-O® mixture to cheese and whip with wire whisk. Put pears through sieve (press them through) and add whipped cream. (If desired, add pineapple or grapefruit pieces. ) Pour into mold and place in refrigerator; let it chill until it is set.
When ready to serve, dip mold in pan of medium hot water, (about 90 – 100°F) to loosen. Put a plate over top of mold and invert carefully and remove the mold. Garnish around base of pear mold with mint leaves or other fruit pieces, etc. … whatever you desire!
