- 2 1/2 cups sifted cake flour
1 2/3 cups sugar
1 1/4 tsp baking powder
1 tsp soda
1 tsp salt
2/3 cups shortening
1 1/4 cups mashed bananas, pushed through a sieve
2/3 cup buttermilk
1/2 cup eggs
1 tsp vanilla
Sift together into large bowl flour, sugar, baking powder, soda and salt. Add shortening, bananas and 1/3 cup buttermilk. Stir to dampen flour. Beat with electric mixer 2 minutes. Add remaining buttermilk, eggs and vanilla. Beat 2 minutes. Pour into 2 paper-lined 9-inch pans. Bake 30 to 35 minutes in 350°F oven. Frost with following frosting.
Lemon-Banana Frosting
- 1/3 cup butter or oleo
2 cups powdered sugar
3 tbs mashed banana
1 tbs lemon juice
Cream butter and sugar; add banana and lemon juice. Mix until smooth an spread on cake layers.
