Source: my own family recipe… TRIED AND TRUE!!!!!
- 2 1/2 cups Baking Mix (Jiffy, Bisquik, etc)
- 2/3 cup sugar
- 1/2 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 cup milk
- 1/2 cup pineapple juice (reserved from drained pineapple)
- 5 Tbsp. shortening, butter or margarine, softened
- 1 egg
- 1 tsp. vanilla
- 1 can (16 ounces) crushed pineapple (drained, but reserve liquid
- 1/4 cup sugar, 1/2 tsp cinnamon, 1/4 tsp nutmeg mixed and set aside
Preheat oven to 350°, grease baking sheet.
- Combine all ingredients except for crushed pineapple. Mix well. Stir in the pineapple. Drop by tablespoon onto prepared baking sheet. Sprinkle tops with the sugar, cinnamon, nutmeg mixture. Bake for 8 – 10 minutes. Use caution as the bottoms can burn easily.
Store in airtight container. These are very moist and cake-like and DEEEEEE-LICIOUS!!!!!
Makes approximately 30 – 36 cookies
