Base Recipes for Master Mix
The following are for making your own Master Mix. There are three types- Original, Reduced Fat, and Whole Grain mix. All of these can be used in most recipes calling for Master Mix, Bisquik®, or Jiffy® baking mixes. Remember, if you use lard, the calories, fat and cholesterol will increase from the amounts stated in the recipes.

Original Master Mix
- 9 cups sifted all purpose flour
⅓ cup baking powder
1 Tbsp salt
¼ cup sugar
2 cups non-fat dry milk
2 ½ cups shortening or margarine
Put the flour, baking powder, salt, sugar and dry milk into a very large bowl. Stir together very well. Add the shortening and mix together with a fork, 2 knives, or a pastry blender until the mixture resembles coarse cornmeal. Put the finished Master Mix into a container with a tight-fitting lid. Keep it in a cool, dry place. Plan to use within 2 to 3 months, or keep in the refrigerator for longer storage.
If using Margarine:

Reduced Fat Master Mix

Whole Grain Master Mix
- 2 cups white flour
2 cups whole wheat flour
½ cup oats (NOT quick cooking)
½ cup cornmeal
3 Tbsp baking powder
1 ½ tsp salt
2 Tbsp sugar
1 cup non-fat dry milk
1 ¼ cup shortening
Put the flour, oats, cornmeal, baking powder, salt, sugar, and dry milk into a large bowl. Stir together very well. Add the shortening and mix together with a fork, 2 knives or a pastry blender until the mixture resembles coarse cornmeal. Put the finished Master Mix into a container with a tight fitting lid. Keep it in a cool dry place. Plan to use within 2 to 3 months or keep in the refrigerator for longer storage.
